- 1). Remove the chops from the skillet after cooking, place them on paper towels and hold in a heatproof container to drain and stay hot while making the gravy.
- 2). Pour all but 4 tbsp. of pork drippings from the skillet into a heatproof container, leaving the small bits and pieces of the cooked chops in the skillet. If there are not enough drippings left after cooking the chops, use vegetable oil.
- 3). Place the skillet over medium heat and slowly add 1½ cups of flour, stirring constantly with a wire whip until the mixture is smooth and all the flavorful bits and pieces have been scraped from the bottom of the skillet. Add more drippings if necessary. If no drippings are available, use vegetable oil. Continue stirring for two to three minutes after the mixture is smooth.
- 4). Turn the heat up so the mixture is bubbling gently in the skillet and slowly pour in 1½ cups of milk while stirring constantly. Continue stirring until the desired gravy consistency is reached. While stirring, turn up the heat if the gravy is not thickening. Slowly stir in more milk if the gravy is too thick until the desired consistency is reached.
- 5). Add salt, pepper or other seasonings, if desired, to enhance the flavor of the gravy.
