Hi, I'm Chef Mariko Amekodommo, Host of Culinary Adventures With Mariko. Today, I'm going to show you how to make a spinach and tofu stir fry. To get started, you're going to want to have a well-seasoned wok. First, add a couple tablespoons of oil. Today, I'm using canola oil because you wan to use something that can heat up at a high temperature like canola or peanut oil. You wouldn't want to use anything like butter or olive oil. So, get your wok with the oil and put it over medium high heat. While your wok is heating, you will want to cut up your tofu. To stir fry, you'll want to use firm tofu and you might want to get, if it's really kind of wet and soggy, you will want to get a paper towel and just kind of wipe it off. If you wrap the paper towel around the tofu, it's going to absorb some of the liquid. Alright. Now, it's a little less wet, it will make it easier to chop up in cubes and put in the wok. I can hear the oil sizzling, which means it's about ready; perfect time. Okay. And you can see these are just perfect little cubes, I'm going to put them back on the plate and now, I'm just going to add them into the wok. Okay. Now, I'm just going to stir it up a little bit and we want the tofu to cook for about three minutes. While the tofu is cooking, I'm going to start with the sauce for the spinach and tofu. First, you want to get of ginger, this is about an inch square, the peel's removed and then you just want to slice that up. It's also a really light meal that's high in protein and it's especially good for vegetarian or vegan diet. You'll want to make sure that the garlic and ginger mixture is really fine. Sometimes I like to put some garlic and ginger in a blender with a little bit of olive oil and puree it and then I have it in a jar in the refrigerator, so, if I'm making a fast stir fry, it's already ready to go. Now, I want to add some of the garlic-ginger mixture to my wok and stir fry that a little bit longer. Now that the tofu is a light golden brown, I'm going to add about six ounces of spinach. So, this is about six ounces of spinach to a half a pound of tofu. Now, I have my spinach and tofu in the wok, along with the garlic and the ginger, and I'm going to add the rest of the ingredients for the sauce.
