- 1). Wash the peppers under cold water, scrubbing with a stiff and clean vegetable brush.
- 2). Position the point of your paring knife at the base of the pepper, above the stem and below the fruit.
- 3). Cut the stem from the pepper, leaving just the fruit of the pepper.
- 4). Shake the seeds from the pepper, and dispose of the seeds.
- 5). Cut the pepper in half lengthwise, if desired, or dice into small pieces or strips. You also can leave the pepper whole, with just the stem end removed. Place the pepper in an airtight freezer container to freeze.
