- 1). Keep oxygen away from it! Store your guacamole in an airtight resealable container and also place a sheet of plastic wrap directly on top of the guacamole to seal out all of the air. Be sure to seal both the plastic wrap and the lid after each use.
- 2). Add flavor and also keep out air! Layer some sour cream on top of the guacamole. Make sure it covers it thickly and completely. Keep in a resealable container. If you do this, you do not need plastic wrap, which can be messy. This is better for making single serving sizes of guacamole, as you would otherwise have to cover the remainder of the guacamole with more sour cream every time you go to put it back in the fridge.
- 3). Add something acidic! Mix in as much lime or lemon juice as is appropriate to the taste. I find that bottled lime juice works best.
- 4). Work fast! Add the lime juice as soon as you cut up the avocado and store any unused portions immediately with the plastic wrap or sour cream on top.
